A close cousin to fresh hops, whole leaf hops – or raw hops – offer a field-fresh character in a whole-hop format that’s kiln-dried for stability. Rich in polyphenols, whole leaf hops are typically used in the hop back during knockout to deliver a complex green character that adds depth to beer.
